I almost never have lemons around the house. Is that wrong? Whenever I buy them, all my uses for them seem to fly out the door. Either that or I keep them all and treat them like gold, never actually using any. I’ve considered getting a lemon tree so I don’t have to go out and buy some whenever I need them.
I’ve been wanting to make lemon bars, raspberry lemon bars, or some other riff off of lemon bars for a little while. But I never have enough lemons in the house. Solution? Make these mango squares! They require only a small squeeze of juice, so they won’t damage my your precious lemon supply.
Plus, what else says summer like mango? Especially with a little coconut sprinkled on top, if you’re feeling like bumping up the tropical factor.

While searching for places to eat in Seattle, one name kept on popping up everywhere: Tom Douglas. Tom Douglas owns several restaurants in Seattle and has earned a few James Beard awards. In the same area as some of his restaurants–Serious Pie, Lola, and Dahlia Lounge, he also owns Dahlia Bakery, known for cranking out fresh and delicious goods throughout the day.
Pound cake is one of the only desserts my dad would ever eat. He’d always buy Sara Lee’s All Butter Pound Cake, and it never lasted long in the fridge. I remember while he loved to store it in the fridge to keep it softer, I loved eating the pound cake straight from the freezer. Biting into the almost-completely-frozen-but-not-quite cake was so satisfying to me, it almost seemed like a buttery, bready form of ice cream that wouldn’t melt. Oh and the beautifully browned crust, still sweet and delicious.
Of course, I’ve moved on from grocery store cakes. But I haven’t had pound cake in ages. However, I wanted something a little different this time. Olive oil cake is something I’ve been wanting to make in a while, so why not olive oil pound cake?
On a recent trip to Monterey, I was fortunate enough to go and visit the wonderful little town of Carmel. I don’t really know the difference between Carmel, Carmel Valley, and Carmel-by-the-Sea. Do you? If you do, please tell me.
Anyhow, with a party of 7, we arrived in Carmel around 1 PM after driving down 17 Miles Drive and Pebble Beach. We were all famished by then, and decided to make a stop for lunch at this Italian/French seeming restaurant on the corner.
While it was small (in proportion to the rest of the city), they were able to seat our large group at a table in the back. I loved the open and casual ambiance, as well as the simple and fresh sounding menu.
Cakes have cupcakes, but why don’t cheesecakes have mini cheesecakes? I love everything in mini: they’re cuter and help me with portion control. With these mini cheesecakes, I get to eat more flavors without stuffing myself. Mini cheesecakes should be more popular.
Enter the Confectional. They’re one of the many little shops in Pike Place Market. They have a good selection of flavors each day and sell mini cheesecakes, cheesecake pops, and cheesecake truffles.
I’ve been craving anything Oreo or cream cheese related lately. Something about the crunch of the cookie and the cool cream just slightly oozing out the sides and melting in my mouth…it’s been a while since I’ve had Oreos, I’m sad to say. I’ve been dreaming about all things Oreo dessert–Oreo stuffed chocolate chip cookies, Oreo stuffed brownies, Oreo cheesecake, cookies and cream cookies. Does anyone else get that? Where they get a craving and can’t stop thinking about it until you overload on whatever that craving is, and it can last for weeks and weeks…
I bought a huge package of Joe-Joes from Trader Joe’s just so I could make cookies and cream desserts. Yep, I had to buy them at the store because I didn’t have any in my house. And I know, they’re not real Oreos and they do taste a bit different, but it’s Trader Joe’s. Who can resist? Not me.
On my last day in Seattle, I had to get some form of a frozen creamy delicacy one last time. Lucky for me, I found Gelatiamo.
Gelatiamo is a small Gelateria close to Pike Place Market. Besides gelato, they also have a case of baked goods. I saw these cute looking popsicles and the guy behind the counter told me they were trying out these new gelato pops: gelato in ice pop form, dipped in chocolate.
I know Seattle isn’t exactly known for their English goods, but I had heard of the Crumpet Shop and had never eaten a crumpet before, so this was on my list of places to go during my Seattle trip a while back.
The shop is in Pike Place Market and has one entrance from the street and another from the inside. They serve savory, sweet, and crumpets with eggs. I got to watch them toast the crumpets and slather it with butter as I waited.
Crumpets are similar to pancakes, except smaller and thicker. They also have more air bubbles, making them a little spongey, and are slightly salty.
Mango Six is a pretty popular chain of Korean cafes. In Shanghai, there’s a street where a number of Korean people worked and opened up a Mango Six, along with many other similar cafes on the same street. They all seem to sell the basic coffee, tea, and waffle with ice cream. Mango Six also, you guessed it, specializes in mango treats. I was able to pay a visit when I was in Shanghai.
